Apple, Walnut And Date Muffins
These muffins were sold in hundreds at my Grandma's cafe years ago.
This muffin recipe was my Grandma's go to recipe for muffins. I don't know much about my Grandma because when I was 9 months old she died from Motor Neurone Disease. What I do know is that she was a great cook. She also had a small cafe in our home town called The Duck Inn. I wanted to share this recipe with you because it has been a family favourite for many years.
The recipe is fail-proof and makes delicious, plump muffins so I would encourage you to try different types of flavours.

3 cups plain (kamut) flour
4 teasp baking powder
1 teasp bi-carb soda
1/2 cup brown (rapadura) sugar
1 1/2 cups milk
3/4 cups oil (extra virgin olive oil)
1 teasp vanilla
1 cup walnuts, chopped
2 green apples, grated
8 chopped dates
Pre heat the oven to 160 degrees. Mix all the ingredients together but don't over mix.
The batter should be lumpy. Put mixture into prepared patty pans and then cook for 20 minutes.
